Here’s a list of hotels in Las Vegas, NV. In this list I mostly covers places to go off the Strip but since I’m not familiar with other spots to stay outside the Strip I don’t want to suggest places I’m not sure about.
Red rock hotel is close to the "Red Rock Canyon" and is out of the strip.

Wynn Hotel is beautiful! They have a popular show called "Awakening" if you stay there, I recommend you to go!

I don't know what to tell you about this one. The fountain show, rooms, food and view is INCREDIBLE. They have a restaurant where you can sit and watch the show of the fountain. They play the show I think is every 30min (don't quote me, I think)

What to do outdoors (not the strip related)
This place is STUNNING ! Is always 20 degrees lower then the Valley. If you need fresh air this is the place. When is winter you can experience snow and beautiful views! Great for hiking, picnic, camping, etc.

This place is so relaxing! You can find short or long trails. Depending on what you would like to do that day. Recommended always BRING A LOT OF WATER.

The view is WOW ! Guys, this place is close most of the summer. Is too hot to be there. For winter/spring weather I will say is perfect. Prepare yourself to walk!

Spring Mountain Ranch State Park | State Parks
This place is in the middle of AZ & NV. If you go to Las Vegas, NV you need to go to this place. The better view is on the first stop on your right (there's a big bridge)
Lake Mead National Recreation Area (U.S. National Park Service)
Great for picnic you can breath fresh air and they have a lot of ducks, geese & also beautiful peacocks!
Floyd Lamb Park
Beautiful place to relax in a distance you can see Lake Mead. Also you they have "horn sheep" but is not all year. They visit the park July-Nov. I think.
