I ruined two cheesecakes before realizing my regular springform was a quarter inch too wide. These fit perfectly with room for the steam to circulate, which is the whole point.

The pan is only half the battle. Without a trivet, a sling, and foil, you'll end up with a soggy mess or a cheesecake you can't get out of the pot. Learned all of this the hard way.

Regular graham cracker crust gets soggy in a pressure cooker if you don't pick the right crackers and bind them properly. Took me about five mushy-bottomed attempts to figure out what works.

Pressure cooking is forgiving but not foolproof. The wrong cream cheese or too much air in the batter and you still get cracks or a grainy texture. These are the exact brands that gave me consistent results.

Plain cheesecake is fine but five extra minutes of topping turns it into something you'd actually photograph. These are what I rotate through depending on the season and who's coming over.
