If you're going to be outdoors this is a must to protect from elements. I prefer a classic white one but a colorful one might be eye catching and easier to clean. It'll depend a bit on how colorful your items are and what vibe you're going for.

Price everything!! Customers can be shy and won't ask for pricing so make sure everything has a price tag or a sign with pricing very visible.
String Tags
I personally have a pricing gun like this one but it's not necessary. I like the look and being able to change prices from event to event if the item isn't selling well but hand written is OK too and has a charm to it.
