Rolling cannoli dough around a broomstick handle was my low point. These tubes changed the whole operation, and the shells actually came out crispy and even for the first time.

Burnt, misshapen pizzelle were my specialty until I stopped using my mom's ancient iron from 1987. These actually heat evenly and the patterns come out sharp enough to frame.

Biscotti kept crumbling when I sliced them because I was using the wrong knife and a warped cookie sheet. Fixed both problems and suddenly they come out clean every time.

Cannoli dough needs to be paper thin, and I could never get there with my regular rolling pin. Once I upgraded my prep tools, the dough actually cooperated.

Frying cannoli shells in a regular saucepan was a splatter nightmare. Proper frying gear made the whole process safer and the shells actually came out evenly golden instead of half-burnt.
