I used to blame my stove, my altitude, even my grandmother's recipe. Turns out my old thermometer was off by 8 degrees. That's the difference between perfect fudge and chocolate soup.

Fudge scorches in thin pots. I learned this the hard way when I scraped burnt sugar off my old saucepan for 45 minutes on Christmas morning. Never again.

Metal spoons scratch pots and plastic ones melt in hot sugar. I melted a spatula into a batch of toffee once and had to throw the whole thing away. These actually survive.

Pouring hot fudge into the wrong pan is how you get pieces that are too thick in the middle and paper thin on the edges. Took me years to figure out pan size actually matters this much.
