Substrate is the material at the bottom of the tank. It is incredibly important to the ecosystem of your tank. The type you choose should depend on the type of animals you are planning on including in your aquarium. For example, some fish are sensitive to sharp gravel because they don't have scales, so aquarium sand will be a safer choice to prevent injuries and disease. Never use soil from your yard or beach sand, the containments and salt will harm your fish.
