Ultra-Moist Chocolate Cake Goodness
Dry Ingredients
2 cups all-purpose flour: Builds the structure of the cake so it holds its shape while remaining tender.
2 cups granulated sugar: Sweetens the cake, keeps it moist by retaining moisture, and tenderizes the crumb.
¾ cup unsweetened cocoa powder: Provides the rich, deep chocolate flavor and dark color.
2 tsp baking powder: Provides an immediate lift during baking to help the cake rise evenly.
1 ½ tsp baking soda: Reacts with the acidic ingredients (cocoa powder and buttermilk) to create extra rise and lightness.
1 tsp salt: Enhances and balances the chocolate sweetness.
Wet Ingredients
2 large eggs (room temperature): Bind the ingredients together, add richness, and aid in structure.
1 cup milk or buttermilk: Adds rich moisture, while the acidity in buttermilk creates a softer crumb.
½ cup vegetable oil: Keeps the cake exceptionally moist for days because liquid fat stays fluid at room temperature, unlike butter.
2 tsp vanilla extract: Enhances and complements the chocolate flavor profile.
1 cup hot brewed coffee (or hot water): Dissolves ("blooms") the cocoa powder to unleash its fullest flavor while keeping the batter thin for an airy texture.
1. Prep the Oven & Pans
Heat your oven to 350°F (175°C).
Grease two 9-inch round cake pans with butter or cooking spray, dust with cocoa powder (or flour), and line the bottoms with parchment paper for easy release.
2.Mix the Dry Ingredients
Whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl until thoroughly combined.
3.Combine the Wet Ingredients
In a separate bowl, whisk the eggs, milk (or buttermilk), vegetable oil, and vanilla extract until smooth.
4. Combine Wet & Dry
Add the wet mixture to the dry ingredients and beat on medium speed for about 2 minutes until fully combined and smooth.
5. Add the Hot Coffee
Stir in the 1 cup of hot brewed coffee (or hot water) using a spatula or whisk. Note: The batter will be very thin and liquidy—this is completely normal and key to a moist cake.
6. Pour & Bake
Divide the batter evenly between your two prepared pans.
Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
7. Cool & Assemble
Let the cakes cool in the pans for 10 minutes, then invert them onto a wire rack to cool completely before frosting.
ganache recipe:
Ingredients
8 oz (225g) semi-sweet or bittersweet chocolate (chopped into small, uniform pieces)
1 cup (240ml) heavy cream (36%+ milk fat)
1 tbsp unsalted butter, room temperature (optional, adds extra shine)
Pinch of fine sea salt
Instructions
Prep chocolate: Place finely chopped chocolate into a heatproof glass or stainless steel bowl.
Heat cream: Warm the heavy cream in a small saucepan over medium heat until small bubbles form around the edges (190 degrees Fahrenheit). Do not boil.
Rest: Pour hot cream over the chocolate, ensuring all pieces are submerged. Cover the bowl and let sit undisturbed for 5 minutes to melt the chocolate evenly.
Whisk: Starting from the center and working slowly outward, whisk until fully emulsified and smooth. Stir in the butter and salt until fully incorporated.
