Yes, you do need one. This makes mixing the dough SO much easier.

Sure, you could use a towel and a bowl, but a banneton is great item to have for proofing your bread and you can wash the liner easily.

This is the best item for mixing your starter during feeds (you can’t use reactive metals with sourdough). The silicone also makes it easy to clean
