This value resort has had a massive facelift recently and it's become an old, new, favorite of mine! They even have family suites that fit up to 8 people!
Disney's All-Star Music Resort | Walt Disney World Resort
My #1 recommendation, if it suits your budget, would be Animal Kingdom Lodge. It's a super fun vibe, and the animals add an adventurous feel!

Another fun, moderate, hotels are the two Port Orleans ones. I personally prefer Riverside, but they're walking distance to each other so you can explore them both at once.

Disney's Boardwalk Inn | Walt Disney World Resort
The Swan and Dolphin are on the boardwalk as well, a little tucked in on the backside, but still offering a great location. There are boats to get to Hollywood Studios or Epcot, or you can walk, and the nighttime vibes are unmatched.

This is a Good Neighbor Hotel located on Hotel Plaza Blvd. Recently opened, the location is convenient and they offer resort shuttles.
Drury Plaza Hotel Orlando - Disney Springs Area
This is in the Marriott Village on Vineland Ave and it's one of the more frequented off-property resorts I or my family stay at in Orlando. Close to the Outlets and Downtown Disney, the location is great and the prices are even better.
Fairfield Inn and Suites Orlando Lake Buena Vista - Marriott Hotels
This is also on Hotel Plaza Blvd, so it's considered a good neighbor resort, and qualifies for the early park hours!
Hilton Orlando Buena Vista Palace Disney Springs Area
This is probably my favorite of the off-property resorts because of it's location and the fact that they don't had insane property fees. It's where I've stayed the last two visits where I was not lodging on property.
