Ham & Pita Rollups

1 pack of Aztek Pita's, 1 cup of mayo, 12 oz Philly cream cheese, mini dill pickles chopped, deli honey ham (thin slices)

Mix the may and cream cheese. Spread a layer on a pita. Sprinkle diced pickles. Layer 2 pieces of ham. Roll up, wrap in saran wrap and chill for a couple hours. 
Slice (1" pieces) and serve!

Any brand works, but I like the baby size as they are easier to chop small. They should be in tiny pieces so they make your roll up easier to assemble. DILL not sweet!

I usually purchase mine from Wal-Mart or my local grocery store. I prefer having it from the deli but pre-packaged would work. Honey ham is best and having it thin makes it easier to assemble.

Sara's Salsa

Sara's Salsa is a crowd favorite. Make it as spicy as you like but these are your base ingredients. Always better chilled for a couple hours. 
10 Roma Tomatos chopped 
1 White Onion finely chopped
½ cup chopped cilantro 
2 Avocados chopped (not mashed)
2-3 Jalapeños (diced and used per your spice liking
Juice from 2 lemons
Salt to taste

I use my Pampered Chef chopper to dice these. Smaller the better but in a “pico” format. The more you buy the more you make!

You can use white or yellow, but I really like using a white onion finely chopped. If you don't love onion you can scale back.

Ripe, but not too ripe where they are mushy when you dice them. They don't brown in the salsa due to the lemon juice. You will NEVER make salsa without chunked avocado again.

Buy it fresh and chop it up yourself. Don't use the stems. Keep your chopping in the leafy area.

You need at least 2 full lemons. Squeeze the juice to taste. If it is too spicy or salty this will offset and help you adjust your mix. It's so helpful when making this dip!

This is in your cupboard, but it does expire. Make sure you have fresh salt on hand. If you go too heavy handed you can offset with some lemon juice.
