Paella without saffron is Jambalaya... which is also very good, but if you want to make paella a good open saffron thread is crucial.  The first step before you start cooking is to warm a shot glass of water and put a pinch of saffron threads into the water to allow them to “open up”.

To start your paella, you want to drizzle a little olive oil in the pan. We prefer an olive oil from Greece and we buy it in bulk because I use olive oil in my cooking constantly.
