The pan is everything. I used a flat-bottomed tube pan for years and wondered why my cakes collapsed. Turns out, feet on the pan let air circulate underneath when you flip it. That one change fixed years of frustration.

Even with a footed pan, I learned the hard way that WHERE you cool matters. Put it near a drafty window once and got an uneven top. These keep everything stable and level while gravity does its job.

Getting the cake OUT of the pan without destroying it was my second biggest problem. I used a butter knife for years and left gouges in every single cake. These tools changed my whole approach.

Angel food cake lives or dies by the egg whites. I used a plastic bowl for my first attempt and the whites wouldn't stiffen no matter how long I whipped. Turns out, even a trace of grease kills the foam. Lesson learned painfully.

I eyeballed the sugar once and my cake turned into a chewy brick. Angel food cake is one of those recipes where precision actually matters. A tablespoon off and the whole texture changes.

Regular all-purpose flour made my angel food cake tough and heavy. The switch to actual cake flour was the single biggest improvement I made, even bigger than getting the right pan. Don't skip this part.
