Talking about Pueblo. . .it is the home of the Slopper. More specifically, the iconic Gray's Coors Tavern is the birthplace of the slopper, an open-faced burger smothered with green chili and typically topped with onions and french fries. No one really knows how, specifically, it originated, but one of the most cool stories is some guy in the 1950s ordered a burger with green chili and when he saw his order, he said it looked like slop. From the onset, the slopper was extremely popular and it has spread across the southwest.

Its unique climate, with long sunny days and cool nights with other microclimate “ingredients”, combine for the perfect environment to grow peaches. In the Uncompahgre Valley in western Colorado in the town of Olathe, the bordering San Juan Mountains create the climate and conditions for the best-tasting, sweetest corn grown in America. Olathe Sweet Corn has both yellow and white speckles so you don't have to choose. Its season runs from July through August. The corn is so popular, restaurants name it on their menus. Try it at Olathe's annual sweet corn festival.

In the southeastern Colorado town of Rocky Ford grow the sweetest melons of different shapes, sizes and colors. The unique climate of this Arkansas Valley area of hot dry days and cool nights create melons with high natural sugars which means extraordinarily sweet fruit. The stars are watermelons and the even more famous Rocky Ford cantaloupes. These melons are incredibly delicious. But don't overeat them. Take that from our not very pretty experience. Now, we eat them in moderation. It's difficult because they are so delicious!

We loooovvvee truffle oil. So these truffle fries are right up our alley. It's hand-cut, skin-on, bronzed fries are served in a V-shaped cone. They are spritzed with truffle oil (YES!!!!), flecked with parsley and topped with crumbles of Grana Padano.

Denver steak refers to a cut of steak. The Denver beef cut comes from just below the shoulder of the cow and is also referred-to as a boneless short rib. The cut itself is marbled with muscle and fat and makes for a great chuck steak. Interesting note - the name has nothing to do with the city of Denver. It was named arbitrarily. We try to get this steak as much as possible because it's incredibly delicious.
