I use sheets to keep track of my SKUs. I like it better than excel for this specifically because adding images is easier.

The template I use to print out all my barcodes at once. I auto fill it on avery labels and then just print it on regular paper. I use template 18195, but you can use whatever you want
I use this to cut the printed barcodes apart, but scissors work too
