Yum! This is one I would love to try for dinner or leftovers for lunch. It looks pretty easy to prepare. Honestly I love getting meal ideas and inspiration from TikTok.
Vietnamese style lemongrass chicken salad bowls. 🥗🥬🍗🍜 Tag me if you try these because they are seriously incredible!! RECIPE marinate: in a bowl mix together… 1 tbsp lemon grass paste 1 tbsp garlic 1 tbsp honey 1 tbsp oil 1 tsp chilli 1 tsp ginger 2 tbsp fish sauce Juice of half a lime Then pour onto about 800g of chicken breast, mix and let marinate in the fridge for 1 hour. I then cooked this in my airfryer at 200c for about 20mins, flipping the chicken halfway. Salad… 1 cucumber thinly sliced, 2 carrots peeled and grated, a handful of alphalpha sprouts, 3-4 cups diced iceberg lettuce and a handful of diced coriander. I then boiled a packet of rice noodles (approx 300g) as per the instructions on the packet. Dressing: 2 tbsp castor sugar 1/2 cup water 1/4 cup fish sauce 1tbsp soy sauce 1 tsp minced garlic 1 tsp chilli 1 lime juiced Dress and top with diced spring onion and crushed peanuts and enjoy!! Makes about 4-6 servings

If you like chocolate then this is for you, and mostly definitely for me. I'm so keen to try this one out, I'm always looking for ways I can make my baking more fulfilling and just all round better for me.
These double chocolate chip muffins are so yummy but are best served warm (i microwaved them for 1 min before eating) - Recipe: Dry 1/2 cup Natvia sweetner 1 cup flour (use oat/almond flour for lower cal) 1 cup chocolate baking protein powder 1 tsp baking soda Wet 1 cup YoPro 1/2 cup egg whites 1/2 cup sugar free maple syrup 1/2 cup almond milk In a large bowl wisk all the wet ingredients together. Than in a seperate bowl mix all the dry ingredients. Fold the dry ingredients into the wet. Add in 1 cup of noshu sugar free chocolate chips. Spoon into muffin trays and bake at 220C for 5mins then drop temp to 180C for 18-20min. Makes aprox 8 jumbo muffins or 12 smaller muffins Enjoy!!!
