Simple manual machine.  I don't use mine nearly as often as I should.  There really isn't any match to handmade fresh pasta.  Perfect for Tagiliatelle al Ragu.

The one thing my sister and brother in law requested when they knew I was going to Italy was a bottle of DOP Balsamic, thankfully they were buying.  I know this one isn't in everyones budget, but honestly there is nothing like it.  Biggest note, is this is a finishing product, not something that should be cooked with, a little goes a long way.  (Learned this on a tour, you will see it later in the list)
