OK, I know these are pricey, but I HIGHLY recommend a quality knife set. We received a few Shun knives as a wedding gift and have slowly built up our collection throughout the years. 

Every single person that comes over to our house and uses those knives comments on how nice they are. I'm not kidding. It makes such a big difference, especially if you cook from scratch or preserve your harvest. 

If you're want to start out with one knife, I would suggest either the chef's knife, utility knife, or the pairing knife. The chef's knife is probably the one I'm reaching for most often in everyday cooking.

OK. I found a small copper bottom stainless steel All-Clad skillet at the thrift store, which I ended up selling. I think about that pan to this day…WHY DID I LET IT GET AWAY!?
