Spring / Summer Recipes

These are tried and true recipes that my family has been loving. They feature spring and summer time seasonal ingredients.

When summer corn and squash are abundant in your garden or at the market, this recipe is one of my favorites to make. It's all done on the grill and is low maintenance and quick.

I make a couple alterations such as using bone in thighs, and using tarragon, lemon thyme, and oregano in the “marinade” just because that's what I had growing in my garden. It's soooo good. If you give this a try, let me know what you think!

Another great summer dish! It's fresh, quick, and low maintenance. The skirt steak cooks quick on the grill and couscous takes like 5-10 minutes to cook and uses the same ingredients as the steak marinade. YUMMMMM

Another great summer dish that comes together super quick (if you're not making your own gnocchi). If you're looking for a way to use up those summer tomatoes and zucchini, this is a great recipe. It uses 2 cups diced zucchini and 3 cups chopped toma...

My parents, sister, husband and myself are living off of one zucchini plant and it's still too much! One of my favorite ways to use it up is to make zucchini fries. In my opinion, it takes a little bit more effort than I feel like putting into dinner...

I didn't try the parm recipe, but I made the chicken for our family dinner night and it stayed crispy even through the travel to my parent's house. Everyone commented how they liked the chicken. Definitely keeping this in my back pocket when I want a...

I look forward to making this when the temperatures start dropping. It's full of flavor and I'm a big fan of the tortellini in the soup.

This one is so good. The roast is slathered in apple butter and slow roasted in the oven with potatoes, white wine and apple cider. It creates this yummy aroma throughout your home as it cooks. It contains seasonal ingredients like apple cider, apple...

Alright, here are my thoughts on this one. It's really good, but it like, the sauce is not enough for a pound of egg noodles. Also, we found it was a bit too lemony for our taste.

I think with those small tweaks, this would be a wonderful, autumnal recipe.

The crispy sage was my favorite thing about this recipe. 👌🏽

Over the weekend we ground up some of our venison harvest and packaged it away. I was craving a meat pie and found this recipe. 10/10! My husband LOVED it and asked that we put it in our recipe rotation. It has a great flavor and is quick to put toge...

My little hobbit heart loves these! The coziness of the seasonal ingredients are perfect for warming my family's belly during these cold winter months.

Plus they can be made and frozen ahead of time if you like meal prepping. For us, since it's just my husband and I, I like to freeze leftovers to pull out for dinner on a busy day.

This one is so good and creamy. I made the mistake of putting all the biscuits I made on top and it soaked up most of the liquid during baking. It was still delicious, but I would prefer to bake half of the biscuits in a separate dish.

Sourdough Recipes

I've been baking with sourdough starter since 2020. I've tried lots of recipes and these are my favorites. These recipes use discard or active starter. If you try one, let me know how they turned out for you!

These are soooo simple. Basically you prepare the dough, let it rest on the counter for 1 hour and then pop it in the fridge to ferment for 18-24 hours.

The next steps are a bit more time consuming--shaping, cornmeal, proofing, cooking, then baking. BUT, once you get the hang of it, it becomes second nature. They also freeze really well.

My FAVORITE use of them is to make freezer breakfast sandwiches. THEY ARE THE BOMB! Pull out of the freezer and let it thaw in the fridge overnight, put it in the oven, airfryer, or toaster oven the next morning and you have your very own, homemade s...

I love her site for sourdough breads. Particularly, I'm so appreciative for the recipe videos. No talking, no music (except you're likely to hear one of the kids in the background playing something lovely on the piano). There's no intro, no outro. ST...

I find this type of video helpful when I need to rewatch a recipe over and over. I don't have to sift through random talking points or a 5 minute dance party (WHYYYYY do people do this?)

I like this recipe for grinder sandwiches, garlic bread, pesto and chicken sandwiches. I make a batch for my brother weekly and he likes to use them for breakfast. Lotsa ways to enjoy this one.

YUM! It's so quick to throw together and get into the oven to bake. It's a great way to use your discard and homemade jam!

Also, you can customize it to your own liking! Add peanut butter and mini chocolate chips or one user mentioned using maple syrup and fig jam!

PS. when using oats, please find one that is organic. Oats are known to have high levels of pesticides including glyphosate (may cause cancer) and chlormequat (linked to infertility in animals). Costco started carrying rolled oats that are organic an...
