Japanese cooking wine that adds sweetness to many dishes. You don't have to use it just for Japanese cooking, though: I love adding 1 teaspoon to my eggs!

You can use cornstarch, but I've found potato starch is a lot better than cornstarch, especially for fried foods and mochi. When I made karaage with potato starch, it was softer, but also crunchier.
