I went through three flimsy clip-on lights that fell into my coals before I found ones that lock on and survive the heat. These mount where you need them and don't blind you while you're flipping burgers.

When you can't see color, you need numbers. I stopped cutting into every piece of meat to check doneness once I started temping everything. My steaks got noticeably better overnight.

Sometimes the grill light isn't enough and you need to see the prep table too. I felt ridiculous wearing a headlamp the first time. Then I nailed every single cook that night and stopped caring how I looked.

Small food disappears on dark grates. I lost three shrimp and an entire batch of sliced peppers through the grill before I started using mats and baskets. Problem solved in one cookout.

Flimsy tools are annoying in daylight. In the dark they're dangerous. I dropped a hot dog into the coals with a cheap pair of tongs I couldn't grip properly. These have weight and texture so you know what you're holding.

Functional lighting handles the grill. But if your whole patio is pitch black, you're still tripping over chairs carrying a hot plate. I strung up lights one afternoon and suddenly nighttime grilling felt intentional instead of chaotic.

At night I lose track of time faster because I can't see the food changing color. A timer going off is the difference between a perfect sear and a hockey puck. These kept me honest on every cook.
