Before I went to Indonesia I thought street food was risky. Then I watched a woman cook nasi goreng on a cart older than me and it was the single best plate of rice I've ever had. These three spots changed how I think about eating entirely.

Half the magic is pointing at a bubbling pot and trusting the cook. These tiny family-run warungs gave me meals I still think about years later, and not one of them had a menu in English.

Nobody warned me that Padang food works differently — they just set down a dozen plates on your table and you pay for what you eat. First time it happened I panicked. By the third time I was strategizing.

Spent years drinking Indonesian coffee from bags at Whole Foods before realizing I had no idea what it actually tasted like fresh. These places fixed that fast.

Back home I'd spend fourteen dollars on a sad lunch salad. At these night markets I ate until I couldn't move for under three bucks. The math alone should get you on a plane.

Forgot about the fancy beach clubs the second I sat on a plastic chair with my feet in the sand eating grilled fish someone caught that morning. These places don't have Instagram pages and that's why they're good.

Walked past a tiny shop in Solo that had six seats and a line out the door. Joined the line without knowing what they served. That was the best decision of the whole trip.

Traveling vegetarian in Indonesia isn't as hard as people warned me — you just have to know where to go. These places made vegetables the main event instead of a sad side dish.

Nobody talks about Indonesian desserts and that's a crime. Walked into a bakery in Bandung expecting nothing and walked out carrying four bags of stuff I'd never seen before.

Everyone flies to Bali or Jakarta and calls it a trip. Meanwhile Solo, Semarang, and Makassar are sitting there with food that made me rethink my entire itinerary.

Hardest part of every Indonesia trip was coming home and not being able to eat like that anymore. Started packing these in my suitcase and it helps — a little.
