These are the items I think are absolutely essential when making sourdough. Remember: you don't have to have the fancy/expensive stuff; use what works for you!
a Danish dough whisk is a MUST. it has replaced the regular whisk completely from my kitchen.

this helps you really get to know your starter when you're starting from scratch. you could use any old jar, though (just make sure not to seal it)

I like using a silicone bench scraper when taking my dough out of the bowl. It's really helpful to get all the dough bits out of there so it doesn't go down your drain. Use the scraper to section dough as needed or clean dried dough off your counter.

Silicone Scoop Spatulas
I prefer to use a bench scraper like this to section dough and get the excess dough off my counter. I personally feel like it's more effective.
