Caramelized onions elevate everything they touch. Mashed potatoes are so comforting--together they are out of this world! Hot tip--start the onions way before the potatoes, because they take awhile.
Vegan Caramelized Onion Mashed Potatoes
This is one of my favorite soups of all time. A hit of fresh ginger and chili flakes gets tempered by the coconut cream. It's luscious, salty, and soothing. Bonus: this soup doesn't take long to make.
Kale and Sweet Potato Soup
Another absolute favorite of mine. The tahini/lemon dressing makes this feel so stick-to-your-bones nourishing, that it doesn't even matter what else is in it. There's a lovely balance of crunch, saltiness, zest and umami. Gluten free and vegan.
Ten Minute Tasty Asparagus and Brown Rice
To make it vegan, use a flax egg (1T ground flax + 2.5T water. Mix & allow to sit and gel for 5 min). I love roasted tomatoes on anything, and this flaky crust is a perfect vehicle.
Grain Free Tomato Basil Galettes with Almond Ricotta
Any Indian recipe is welcome on my plate any time of year, but the creamy sauces and their spice blends are particularly inviting in Fall and Winter. This is a super accessible, and nourishing dish that's going to be a crowd pleaser for sure.
Indian Coconut Butter Cauliflower.
This blew my GD mind. Tastes like takeout! A good snuggly meal.
Harissa Aubergine - The Little Green Spoon
These are stupid-good and have minimal ingredients. Parsnips have never had it so good.
Nut Butter Crusted Parsnip Fries – Oh She Glows
This was surprisingly tasty and worked well with the large gluten free shells by Jovial and the Whole Foods brand marinara sauce. Can also be made into a lasagna--the tofu cream can be used in place of ricotta. A lovely recipe!
Easy Vegan Stuffed Shells
I know these are summer ingredients, but I don't want to make soup in the summer, so here we are. So simple. Step 1: Roast everything. Step 2: Blend. Step 3: Eat it.
roasted eggplant soup
I wasn't always vegan. In the beforetimes, I loved the hell out of a good quiche. This one is worth your time--assuming you like artichokes. It's crustless, and pretty easy. I may have to try and recreate this with a tofu base or something. To make it gluten free, I just used almondmeal or almond flour in place of the breadcrumbs. Enjoy!
Baked Artichoke Squares - Shutterbean
This is a lighter, healthier soup, but still infinitely satisfying. Uses celery root as it's base flavor, and is velvety smooth and perfectly balanced
Creamy Celeriac Soup

F****ing cute AND delicious. It's a portable pumpkin pie!
Vegan Pumpkin Pie Cookies
I'm not a big apple pie fan, but I will eat these. They are raw, refreshing, sweet and are a hit with everyone. I replace the walnuts with pecans because of an allergy and it still works beautifully. You will need a food processor for this one. I almost never make the coconut cream topping--you don't need it--but when I do, I just use canned coconut cream inst...
Apple Pie Bites
THIS. Please make this. It's like a cinnamon roll. Melt a little coconut butter on top, and the illusion is complete. Takes a little bit of messy configuration, but it's so worth it.
Vegan Monkey Bread (gluten-free + date-sweetened)
Holy hot damn are these good. Eat it for dessert. Have it for breakfast--who cares? They're practically healthy.
Gluten-Free Vegan Maple Pecan Scones
A little bit healthier take on a classic Fall flavor.
These are such a treat! I love the clean ingredients. I'm too impatient to wait for a bread loaf to bake, so I make them into muffins. It takes 15-20 minutes.
This is my favorite sweet potato dish to make for special occasions. You can flavor it to your taste with the ginger, maple syrup and salt. I love the toasted coconut and macadamia nuts on top--such a satisfying dish.
Nikki's Sweet Potatoes
Mother of God, would you look at that photo? It's everything you want it to be--warm, gooey, sweet, with hits of saltiness, and loads of melting chocolate. Bonus, it's made with healthier ingredients! Paleo, vegan, and refined sugar free. Boom.
Kristin’s Salted Caramel Skillet Cookie
Hear me out. I know cantaloupe is most people's least favorite fruit. But this recipe will redeem it. Ripe cantaloupe blended with cinnamon, vanilla and ice until perfectly smooth--it's like eating a cloud! It's also a incredibly hydrating and easy to digest, which is helpful during a season of indulgence.
Cantaloupe Smoothie
Who doesn't want a mouthful of chai spiced anything in the Fall? Gluten-free, vegan, and sweetened with dates--it's about as clean as it gets. I make these into muffins and bake for 15-20 minutes to save time.
