My go-to meal prep! I ate this for legitimately 4 months straight. It is high in fiber, very filling and packed with nutrients, all while remaining fairly low-calorie. It also has a decent amount of protein!

A vegetarian alternative to chicken salad! I personally use hummus instead of mayo, to keep the calories lower and the fiber higher (plus, I think it just tastes better!).
