The whole point is getting the meat up off the bottom so drippings baste your vegetables below. I ruined two Thanksgivings with pans that were too shallow before I figured out what actually works.

Sometimes your pan is fine but the rack situation is a disaster. I bent two cheap racks before finding ones that actually hold weight without collapsing mid-roast.

Flavor from drippings means nothing if the meat itself is a dry brick. I overcooked so many chickens by guessing that my family started bringing backup dinner.

Drippings alone are great, but the right oil and seasoning on those vegetables before they go under the rack takes everything from good to ridiculous. Took me a while to stop just tossing raw potatoes in there.

Getting drippings back onto the meat while vegetables soak below is the whole cycle that makes this method work. I used to use a regular spoon and burned my knuckles every single time.

All that work roasting meat over vegetables perfectly, and then I used to hack it apart with a dull knife on a plate. Presentation and cleanup got way better once I grabbed the right tools.
