Short mitts are a joke when you're reaching into a 450-degree oven. I burned the same spot on my forearm three times in one month before I finally got serious about finding longer ones.

Sometimes mitts are too bulky and I need actual finger control. Shredding a pork shoulder straight off the smoker or adjusting a rack inside a hot oven requires dexterity, not oven pillows on my hands.

Getting food out of the oven is only half the problem. I set a screaming hot casserole dish directly on my laminate counter once. Once. These saved me from making that mistake again.

Frying, canning, making stock from scratch. Any time there's a big pot of boiling liquid involved, my regular kitchen setup failed me. These are the things I added after one too many close calls.
