You MUST have gel food colors if you want anything other than beige macarons. You do not want to add any extra water and absolutely positively do not add any oils or grease. You will ruin the entire batch. Gel food coloring is the only way to go.

When making macarons, I like to use one piece tools to fold my batter. That way water can't sneak into the two pieces. Just make sure that you wipe them down with vinegar before you use them in your batter.
