I went through two flimsy presses that barely left a mark before landing on ones that sear those deep lines into the bread. The kind where you open it up and your sandwich looks like it came off a commercial flat top.

Regular sliced bread just disintegrates under pressure and heat. I ruined probably twenty sandwiches before I figured out which breads actually hold up and get that crackly exterior without going rock hard.

Nothing worse than biting into a pressed sandwich and the cheese is still a cold slab. I learned the hard way that not all cheese melts the same, and some just refuse to cooperate with heat.

Cheap deli meat tastes fine cold but turns rubbery and weird when heated. Learned that lesson after a truly terrible hot ham sandwich that I still think about with regret.

Dry paninis are a crime. But you can't just slather mayo on there and call it done — the right spread is honestly what separates a forgettable sandwich from one you think about at work the next day.

Raw lettuce in a panini is a rookie mistake — it wilts into nothing and slides out the back. These are the vegetables that actually improve when they hit the hot plates instead of turning into mush.

A dull knife and a wobbly cutting board turn sandwich assembly into a frustrating mess. Half my early paninis fell apart because I was hacking at ingredients with the wrong tools.

A panini by itself is great but pairing it with the right side turns it into an actual meal. These are what I rotate through so lunch doesn't feel repetitive even when I'm pressing sandwiches four times a week.

Melted cheese bonded to grill plates is my nemesis. First month with my panini press I almost ruined it because I didn't clean it right — now I have a system that takes two minutes flat.

Nothing kills the panini habit faster than opening the fridge and finding wilted basil and dried-out cheese. Proper storage is what keeps me actually making these instead of defaulting to cereal for dinner.
