Bought my first canning rack without measuring anything. It sat on top of my pot like a sad hat. These actually fit inside standard 12-16 quart stockpots most people already have.

Started with random jars from my recycling bin. Learned the hard way that not all glass handles pressure changes the same. These are the ones that haven't cracked on me yet.

Nothing worse than processing jars for 45 minutes, hearing zero pops, and realizing your lids were duds. Threw out an entire batch of peach preserves before switching to these.

Burned myself twice before admitting I needed actual tools instead of oven mitts and a soup ladle. These cost less than the emergency aloe vera I was buying.

Realized my 8-quart pot couldn't cover quart jars with an inch of water. You need at least 12 quarts, and 16 is the sweet spot for not stressing about water levels mid-boil.

My first jam was basically fruit soup because I eyeballed the pectin. Measured everything after that disaster and suddenly my jam actually set. These are the ones sitting in my pantry right now.

Gave away unlabeled jars one Christmas and my brother-in-law thought my habanero jelly was apple butter. His face was memorable, but proper labeling prevents emergencies.

Most canning books read like they were written for someone who grew up doing this. Found a few that actually explain the why behind each step, which is what kept me from quitting after my first failed batch.
