My son and I both enjoyed this step by step drawing book. I think I got it at the beginning of 2nd grade and it was fun to work through it during free time.

You always need a few notebooks around for random note taking etc.
I sometimes find an educational video on YouTube and have him take 3-10 notes on what he learns in the video. Or find a writing prompt and have him fill the page!
