I personally find all of these quite interesting and beautiful at the same time.
This is a stylish, social, and budget-friendly, with a pool and FREE breakfast. (~€25/night)
Offers both dorms and private rooms, close to the ferry and beaches. (~€30/night)
Two Pillows Boutique Hostel
Basic but clean dorm-style accommodation in the heart of Valletta. It is very close to major attractions and it's ~€14/night, there are also a LOT of similar ones in the area that you can find.

This is also a scenic and affordable way to travel, it costs €2.80 for a round trip.
Valletta Ferry Service - Public Transport
