Either place in the fridge for the recommended amount of time, or winter sow outdoors.
Black Eyed Susan, or Rudbeckia are a popular classic. They bloom well and attract bees, great for pollination. Cold stratify for 1-3 months.

Echinacea, or Coneflower. This cute flower is one of my favorites. Placing their seeds in the fridge for about 4 months will greatly increase germination rates.
