If you like a little more quiet and privacy, these are hotels and airbnbs I have already stayed and recommend.
Walkable distance to main attractions of Sevilla, quiet surroundings. The place has everything you need, two rooms, equipped kitchen, central AC (which for Sevilla is a must). Very much enjoyed staying here!
Seville - Apartment in Historical Center
Amazing place in Mallorca, the staff was the kindest, the place is very calm and soooo beautiful. Staying in the countryside and not in a big villa was also very charming and quiet.

Had the best stay in this small B&B, had a room with a view to the Gran Canale, it doesn't get any better than that. Breakfast is not cheap but it's definitely very complete.

Perfect location, close to everything. Be mindful that the toilet and shower are inside the room, with cubicles, not separate rooms.

I love staying at hostels while traveling, for budget reasons and also meeting new people!
One of the best hostels I've ever been. It's inside an old convent! Breakfast was super nice, and rooms were well equipped, new furniture and super clean.

In the center of Palma, the beds are super private (you have your own little closet inside the bunk beds). Nice common areas and clean common bathrooms :)
