I have been to Taiwan twice, so here are some of my best hotel/activities/food recommendations.  The south and north parts of Taiwan are a bit different, also regarding prices (the north is more expensive, but still not as expensive from a european point of view). I love both parts of Taiwan!

Hotels

I only stayed at a few hotels in Taiwan, but here are the best ones.

We stayed at this hotel, and it was not only beautiful but also convenient. The night market is very close by, but we didn't hear any noises inside the hotel.

If you are travelling around Kaohsiung, then definitely go to this restaurant! From a German perspective, the food is quite cheap and also very delicious!

Gushan is a beautiful place in the south of Taiwan. The shaved ice I tried at this store was fantastic!

Around this lake, you can find people selling fresh coconuts and a specific kind of Jelly (Ayu) that is quite popular in Taiwan. The lake is definitely worth walking around.

There is a mango market hall, but across from that is a small shop that sells Mango Shaved Ice and it's so worth it!

I truly recommend this. Unless you are travelling with locals that have a car or a scooter, getting around without this ticket is a bit difficult.

Before going to the observatory, I recommend "climbing" up the elephant mountain. (No worries, there are staircases; it's not really a climb.)
Please go in the evening, the sun sets quite fast in Taiwan, but don't go when the sun is strong. It's exhausting to go up, but even if you're not a marathon runner, it's doable with a few breaks.
