POTATO WRAP🥔 INGREDIENTS: ▪ 1 medium potato (about 5 oz) ▪ 1 egg ▪ ¼ cup (1 oz) shredded mozzarella cheese ▪ Rocket, cherry tomatoes, and fresh mozzarella to taste ▪ Spices to taste (oregano, garlic powder, pepper, etc.) ⏳ Time: 10 min 1⃣ Slice the potato into very thin rounds. 2⃣ Place them in a non-stick pan over medium heat and cook for 5 minutes. 3⃣ Pour the egg and sprinkle the shredded cheese on top. Add 80g flour and whisk until smooth and lightly golden. Add the Milk: Gradually pour in 4 cups of milk, whisking constantly to avoid lumps. Cook until the mixture starts to thicken slightly. Mix in the Eggs: In a separate bowl, whisk together 3 eggs, 1 cup sugar, and 1 tbsp vanilla. Immediately add this mixture to the pot with the milk and roux, stirring constantly to combine. Continue cooking on low heat until the pudding thickens to a creamy consistency. I am making a small batch in the video, but here are all the measurements for the regular sized batch. This recipe yields about 12-14 jumbo cookies. Everything needed for this recipe is linked in my bio! Ingredients: •1 cup unsalted butter, softened •1 1/2 cups granulated sugar •2 large eggs •2 tsp vanilla •2 3/4 all-purpose flour •2 tsp cream of tartar •1 tsp baking soda •1/4 tsp salt •4 Tbsp granulated sugar (for coating) •1 Tbsp cinnamon (for coating) Apple Pie Filling: •2 honeycrisp apple, chopped •1/3 cup granulated sugar •1 1/2 Tbsp brown sugar •1 Tbsp cornstarch •1 tsp ground cinnamon •1/4 tsp ground nutmeg •1/4 tsp ground cloves •1/4 tsp salt •1 1/4 cups water Directions: Preheat the oven to 375°F and line a baking sheet with parchment paper. Apple Pie Filling: In a small saucepan over medium/high heat, add granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, cloves, salt, and water. Stir until completely dissolved. Let the mixture come to a boil, while stirring frequently. Add in the chopped apple and stir to coat. Turn heat down to medium/low and let filling simmer until thick and apples are soft. Set aside. Snickerdoodles: In a large mixing bowl, cream together butter and sugar until light and fluffy. Add in the eggs and vanilla and mix until fully combined. Fold in the flour, cream of tartar, baking soda, and salt until a dough forms. Dough will be slightly sticky. Using a large cookie scoop, scoop out dough balls and roll in mixture of cinnamon and sugar until coated. Place dough balls at least 2” apart on your baking sheet. These spread! Bake cookies for 8 minutes. Then, remove from oven and make a well in the center of each cookie by pressing down with a tablespoon. Add the Apple Pie Filling to the center of each cookie. Place the cookies back into the oven for another 2-3 minutes until edges are golden and filling is warm. When cookies are finished baking, take them out of the oven and let cool completely. RHUBARB STRAWBERRY CHIA JAM 🍓 INGREDIENTS: 1.5 cups fresh rhubarb, sliced 1.5 cups strawberries, halved 1-2 tsp honey (or other liquid sweetener) 2-3 Tbsp chia seeds (depending on desired texture) INSTRUCTIONS: Prepare the fruit as instructed and add to a small pot. Cook down over low-medium heat for 3-5 minutes and lightly mash with a wooden spoon. Take off the heat, add in the sweetener and chia seeds and stir to combine. First things first, botulism is VERY unlikely during lacto-fermentation because the acidic environment created by lactic acid bacteria inhibits the growth of botulism.
