English muffins in name, if not in nature, these have a nice chewy/bouncy texture, that toasts up lovely and crisp. They have a slight sweetness that works with everything.

This comes from a small, new (I think), Canada-based company and I go through it like it's free (it's not). Finding gluten free teriyaki is like wining a prize, and the addition of ginger and sesame to this one makes it extra delicious!

I don't know what dark and arcane rituals they perform at the XO Baking Co. factory, but they can just keep it up, whatever it is. The pumpkin bread is a year-round favourite, and it doesn't last very long at all.

Baking Staple #1 - sweet rice flour. This is the most common base to all mixes. Often the Asian brands are gluten free, and far cheaper than Bob's or other nicely packaged flours.

Baking Staple #2 - tapioca starch. This is necessary for a smoother texture, as well as structure. It's very sproingy.

Baking Staple #4 - potato starch. You don't need much, but it backs up the tapioca in texture and keeping it all together.
