Half the grill presses out there are too light to do anything or so heavy they squeeze all the juice out. These sit in the sweet spot where the meat stays flat, the sear is even, and you're not wrestling with your food.

A good press means nothing if your pan can't hold heat. I ruined a lot of ribeyes in thin stainless steel before I figured that out the hard way.

Nothing kills a good sear faster than oil that starts smoking before the pan is hot enough. I set off my smoke alarm so many times my roommate thought I was doing it on purpose.

Pressing a steak with your thumb and comparing it to your palm? That trick never worked for me. A thermometer took the anxiety out of cooking expensive cuts.

A great sear needs great seasoning underneath it. I used to think salt and pepper was enough until a friend made me a steak with a proper rub and I felt personally attacked.

Cast iron will outlive you if you treat it right. I almost ruined mine with dish soap the first week because nobody told me the rules. These keep everything seasoned and ready to go.
