Recipes based around chicken.
Rotisserie chicken makes these tacos SO simple. Pile on tons of veggies and you’re good to go. You can drop the shells and eat these bowl style if you’d like to reduce your carbs/calories. Corn tortillas are lower calorie than flour.
Rotisserie Chicken Tacos
I’m a die-hard taquito girl. While this will never replace the beautiful, greasy convenience of a frozen beef taquito, they offer a nice (and yummy) alternative with a few more nutrients. I love the hidden veggies!
I used this recipe as a base to bounce off of. I don’t love this creator’s stuff BUT I keep this one around to remind myself that I can make a better tzatziki bowl ;) Give it a try!
Chicken Tzatziki Bowls
One of my favorites for packing in tons of veggies and tons of flavor. I love an Asian inspired sauce and this one really does it for me! Serve with rice- brown if you’re feeling extra healthy.

Cooking salmon in foil like this makes it so easy! I don’t love asparagus so I often sub out another veggie or two. But the foil fish is excellent.
Baked Salmon in Foil with Asparagus and Lemon Garlic Butter Sauce
This is such a unique recipe, but I’m glad I gave it a try! It’s incredibly flavorful and definitely needs that starchy rice to stop it from being a little too much. It all goes very well together!
Miso Butter Salmon with Sizzled Scallion Salsa Verde
Blackened salmon is the perfect base for a fish taco. I make mine even simpler than this- just a bit of guac, a big piece of fish, diced red onions, and shredded cabbage with a quick homemade coleslaw dressing. One of my absolute favorite dinners- so...
Blackened Salmon Tacos — Smart In The Kitchen Fish Recipes
I love a good Thai red curry. I usually use a bottle of sauce from Trader Joe’s, every vegetable I can fit in the pan, and rotisserie chicken rather than shrimp. But Thai curry is incredibly customizable and can turn into whatever you like!

Red Meat
Beef and pork recipes!
I never get sick of this. You can dress it up or down however you choose- one of my favorite cheats is to replace the ground pork with frozen pork/veggie dumplings. I also love some mushrooms, ginger, and edamame in there! My go-to lazy sauce is a sp...
Egg Roll in a Bowl
A long-time favorite of mine. Instead of orzo I serve it with potatoes slow cooked in foil on the grill. So perfect for using up that summer garden produce! Sometimes I cheat and don’t even skewer all the ingredients- I’ll just do it sheet pan style ...
Beef-Vegetable Kebabs
I love the flavor on these! Serve with some elote or roasted veggies and enjoy the simplicity of a classic street taco.
Mexican Street Tacos
Making your own enchilada sauce is fun sometimes, but I usually just use a jar. This mix makes great filling for all kinds of things- tacos, enchiladas, quesadillas. Use it as a topping for nachos or in a taco salad. This possibilities are endless!
Healthy Chicken Enchiladas

Most of these are vegetarian, but I like to add shredded rotisserie chicken to them.

Yummy, hearty, and quick enough for a weeknight. Add some homemade bread and you’re really cookin!!
Lemon Chicken Orzo Soup
Yet another soup I love adding rotisserie chicken to! I also use a mushroom blend rather than just shiitake since they’re tough to find here. The broth is just *chef’s kiss*
mushroom leek & cannellini bean soup
This is it. This one is my Roman Empire. It’s one of my favorite meals EVER. Even my husband calls it “the really good soup”. I add rotisserie chicken, double the batch, and bask in all that creamy glory. It freezes great, too! Just writing this has ...
Wild Rice and Mushroom Soup
Another soup that can’t be saved from my desire to add rotisserie chicken to everything. This one has lovely depth of flavor and packs so many veggies into one spot!

Cauliflower Shawarma Grain Bowl with Crispy Chickpeas
I love these things. They’re like a guilty pleasure. I ignore the bun and just eat the patty topped with plenty of tzatziki. Served with some lemony feta potatoes? omg. Too good.
Greek Veggie Burgers with Cucumber Feta Sauce
So delicious! I love serving this with some pan-fried fish (something mild and flaky like walleye, sea bass, pollock, etc.). To make good leftovers I leave the arugula out and just add it to the portion I’ll be eating. Reheat with a little bit of mil...
