I've read a TON of science fiction. Here are some of the most memorable and impressive.

Pre-2000
Some things never go out of style. Most of these I read either because of recommendation or because I found them while browsing in Half Price Books.
It's a classic for a reason!!
Dune
This whole series is just ridiculous fun! Super witty and interesting.
The Hitchhiker's Guide to the Galaxy
I absolutely loved the speculation about what freezing humans would do to society.
The Worthing Saga
Fascinating thought experiment!
Pastwatch: The Redemption of Christopher Columbus
Very out-dated in many social ways, but the story itself is absolutely fascinating!
Stranger in a Strange Land
I first read this when I was young. Re-reading as an adult had me changing my opinion about the characters, but not the story itself. In fact, it's a trilogy, and the third book is my favorite.
Ender's Game
I will warn you, there is some content in this book that is absolutely BRUTAL to read about. But, it's an astonishingly interesting and superbly written take on first contact with another species.
The Sparrow
It may be stretching it a bit to call this science fiction, but it technically fits the bill. I read this in high school and it really stuck with me. I've thought about it a lot over the years. It's helped me understand a lot more about other people's realities.
Flowers For Algernon
Do yourself a favor and read this next! It's so much better than the movie! I had the good fortune to read this in high school before the movie came out and I'm so glad I did.
Jurassic Park
Post-2000
All of these were found via the interenet. It's definitely changed how I source books.
This book really stuck with me! No spoilers, but it totally threw me for a loop.
Fallen Dragon
I love this book! It's unique, intelligent, creative and memorable.
Tuf Voyaging
Fantastic space opera!!
Leviathan Wakes
This is a huge, sprawling story! Very entertaining.
The Commonwealth Saga
What might happen when science, hubris and time collide.
Children of Ruin
Truly unique ideas and great world-building!
The Reality Dysfunction
I love reading other people's ideas about altered societies.
Destiny's Cradle
Fantastic series!! I loved every bit of it. And there's some surprises thrown in. They've since made it into a TV show and did a pretty decent job of it!
