The holidays can be a difficult time when you have to restrict your diet. Over the years, I've found some really great recipes, so I don't have to feel left out of the food joy. There's a lot of overlap between Thanksgiving and Christmas for our families, so these recipes have been thoroughly tested.

Herb Buttered Corn and Green Beans
Honestly, if you're short on time, skip the breadcrumbs and just use chopped almonds instead. I prefer it with 2 cloves of garlic. And the method they describe for mashing the garlic never works for me. Instead, I grate it on a parmesan grater. And violife has a fantastic parmesan replacement! Massage the salad with your hands to soften the kale. I also love adding either cranberries or grapes.
The Kale Salad That Started It All
I know this seems overly simple, but something magical happens in the oven! And I know you can buy pre-cut squash, but I do not recommend it. I've had it both ways and you can really tell the difference - the pre-cut is watery.

Anything that CAN be made ahead, I definitely make ahead. This freezes really well and is one less thing to do on the day of.
I followed advice from reviewers and saved the fat (plus some butter - you can use DF) to use to make a roux. The two cups of chicken broth at the end I used was homemade. I did find it needed more water than they said.

I used coconut sugar and instead of a full can of coconut milk, I used just the cream from one can and for the remainder I used oat milk. Everyone loved it!
