I love to cook, but sometimes you don't want to spend a lot of time at the end of the day.  Here are some of my family's favorite meals that are easy and don't take a lot of prep.  Incidentally, these are all gluten-free and mostly dairy-free as well.  Two call for dairy, but you can easily sub it out. And certainly sugar-free!

Definitely not authentic, but it's delicious! Changes I make: I use a chuck roast, cut up, because I prefer fattier meat.  I also cook longer, closer to 2.5  hours because I prefer fall-apart tender.  Lastly, for all recipes, I always use 1 tsp of salt per pound of meat. It seems like too much, but it's not.

I have made this SO many times.  When you really don't feel like cooking, this is what you want.  It literally takes a few minutes.  Often I will marinate a couple pounds of chicken, then throw them into the freezer in individual containers for later.  They don't take long to thaw.  

Changes I make: I add a couple TB of oil and I always use 1 tsp of salt per pound of meat. It seems like too much, but it's not.

This had way more flavor than I was expecting given how quickly it came together.  I love it!

Not sure how authentic this is, but it sure is yummy!  I use coconut sugar instead of brown sugar just because we are a low-sugar family.

Seriously easy and fast!  Bonus that it's delicious.

I love this recipe!  It really doesn't take very long to prep and it's just so tasty.

Very, very tasty and fast to get on the table!

My changes: I fry some pancetta right before adding the onions. I use fresh thyme and cook the meat in duck fat instead of olive oil.  Also, I always use 1 tsp of salt per pound of meat. It seems like too much, but it's not.

This is a very impressive flavor profile.  I get comments like:  "WOW! This is SO good!" and "Oh my god!!" when I make this for anyone.  It's definitely way better the next day. 

My changes: I always use 1 tsp of salt per pound of meat. It seems like too much, but it's not.  To keep things simple, I use three cans of mild green chiles instead of fresh peppers. I only use one (14oz) can of Muir Glen fire-roasted tomatoes. I just prefer it less tomatoey.  Also, never add garlic to the pan at the same time as onions.  Garlic burns much more quickly than onions.  Get the onions almost done, then add the garlic.

For some reason, I feel like a kid getting a treat when I eat this!  It's so good.

My changes: I use GF noodles, and I can’t do dairy, so I actually substitute oat milk or coconut milk for the heavy cream. I’m sure it’s divine with it!  Violife has a fantastic fake Parmesan cheese.  And I just leave the flour out.  It's not necessary.

I make this all the time because it literally takes 1 minute. It's also very versatile because you can use it in a bowl, chipotle-style, in tacos, on a salad, etc. I will say that I use different salsa, but that's because I'm in Texas and am spoile...
