Every batch used to be a coin flip. Sometimes I'd get decent slices, sometimes I'd end up with a pile of expensive crumbs. These are the tools that finally made slicing consistent, even when the log is still warm.

Half the slicing battle is getting a log that's actually uniform before it goes in the oven. I used to end up with lumpy, spread-out blobs that were impossible to cut neatly no matter what knife I used.

Crumbly biscotti isn't just a knife problem. I realized my logs were falling apart because I was skipping small details in the dough. These ingredients made the texture firm enough to slice cleanly.

Nothing worse than spending an afternoon baking perfect biscotti only to find them soft and stale two days later. Took me a while to figure out that storage matters almost as much as the recipe.
