Male Halfmoon Doubletail Betta
Chili Rasbora fish can thrive in 5 gallons and are pretty much beginner fish. You should keep 6-10 in the 5 gallon as they are schooling fish and even prefer closer to 10.

While a 5 gallon is okay for 1 male Beta, a 10 gallon is ideal. They prefer the extra plant life and it promotes active swimming

You could do a PAIR of Sparkling Gouramis. They are shy and love the tank to be heavily planted.
Sparkling Gourami (Trichopsis pumila)
You could do 1 Gourami as a centerpiece fish like the beta. I would recommend this fish be alone OR you could add some pygmy corydoras as a little school of bottom dwellers.
Neon Blue Dwarf Gourami
Corydoras - You could add a school of 6-8 for some bottom level movement. They help liven the tank up if you decide to add with 1 Gourami or just as a school in the tank alone. They love sand substrates more because gravel hurts their whiskers.
Pygmy Cory (Corydoras pygmaeus)
You could do 6-8 Ember Tetras with 6-8 Corydoras

A school of 3-5 Endlers thrive more in 10 gallons as long as it is set up correctly. You could choose to add some corydoras if you'd like
