This is a good meal for fall or a dump and go meal. Makes a lot of left overs or if you need to feed a crowd. I usually have to freeze a good bit, but its awesome to have on hand when you don't want to cook. There's several ways to make this but here is how I make mine. You can cook this in a crock pot or on the stove, it's whatever you prefer. You can also use chilli seasoning or taco seasoning, but I use chilli. Some people prefer to use the taco.
I use:
3 chicken breast (thawed)
2 cans of Great Northern Beans (drained)
2 cans of Black beans (drained)
2 cans of rotel tomatoes whichever you prefer (Don't drain)
2 cans of corn (Don't drain)
1 or 2 whichever you prefer McCormick chilli seasoning packet
Oregano seasoning
Basil seasoning
Minced onion seasoning
2 cups of chicken broth
Let it cook for about 4 hours or until chicken is completely done. Take the chicken out and shred it and put it back in.
After the chicken is shredded, you will need to melt a block of cream cheese and may need to add a little bit of heavy cream just to make it a little more creamy than soupy.
Serve with sour cream and shredded cheese and eat up! Hope you enjoy!
