For best freezing, undercook the pasta just a bit, maybe one minute before al dente! I also add frozen spinach to this (cook & drain first!) at the very end.

I've also frozen just the sauce, and that works well too!

Can be made vegan, but I always add ¼ cup of heavy cream at the end! I also use 2 jalapenos for an extra kick. Great served with mexican blend cheese and tortilla chips!

My changes: 
- I always use the entire batch of seasoning! Half seared with the ground beef and the other half directly in the crockpot. 
- I use petite diced tomatoes instead of regular diced since I don't like big tomato chunks.
- I add an entire defrosted block of frozen cut leaf spinach at the very end of cooking. You can't really taste it, and I love having more veggies!

We always have these in the freezer! I add a jalapeno and use salsa verde instead of pico. 

I do usually make two batches (12 burritos) when I cook these, but I don't recommend trying to make both batches at once! It takes forever to cook down in the pot.

To freeze, wrap each cooled burrito in foil, then put the foil-wrapped burritos together in gallon ziplocs.

One of my favorite soups! Add two cans of cannellini or other white beans! 
The tortellini does break down a bit when defrosted, but that hasn't bothered me. If you feel strongly about it, you can always keep the tortellini out of the soup when you make it and only cook it when you defrost!

This is a slow-cooker recipe, but I usually make it on the stove! The whole thing takes less than an hour.
