Since having weight loss surgery, I’ve been focusing on meals that are lower in carbs and higher in protein, and prepping ahead makes that so much easier. Here’s how I do it: Every weekend, I whip up a batch of something delicious—usually four servings. I freeze three and keep one fresh, then rotate through my frozen meals during the week by defrosting them overnight. This way, I get variety without the daily cooking grind, and I leave a couple of nights open for spontaneity or leftovers. On extra-productive weekends, I’ll double up and prep two meals, giving myself a break the following weekend.
