Hot Honey Kickin' Chicken & Potatoes RecipeEquipment:• 2 Slow Cookers• Cast Iron Pan/Casserole Dish• Avocado oil spray• Meat ChopperCROCKPOT 1: HOT HONEY KICKIN’ CHICKENIngredients:• 3.5 lbs chicken breast (Perdue Harvestland free-range) ≈ 5 large breasts• 1 can (6 oz) organic tomato paste (Great Value Organic)• Hot Honey Chipotle Sauce (PACE)• 5 tbsp soy sauce• 6 tbsp minced garlic• 1 tbsp rice vinegar• 4 oz diced onions OR 1 small yellow onion, finely diced• 4 tbsp of chive & onion cream cheeseInstructions:1. Prep the Slow Cooker: Spray your crockpot with avocado oil spray to prevent sticking.2. Add the Chicken: Place the chicken breasts in a single layer in the bottom of the slow cooker. 3. Make the Sauce: In a medium bowl, whisk together: Tomato paste, Half of the Hot Honey Chipotle sauce, Soy sauce, Minced garlic, and Rice vinegar. Pour this mixture evenly over the chicken. 4. Add Onions: Sprinkle the 4 oz OR (1 small) diced yellow onion over the top.5. Slow Cook: Cover and cook on LOW for 5.5 hours. 6. Shred + Add Remaining Sauce: After 5.5 hours, shred the chicken directly in the crockpot using a meat chopper. Stir well to let it soak into the juices. Add the remaining Hot Honey Chipotle sauce and stir again. 7. Make It Creamy: Add 4 tablespoons chive & onion cream cheese. Stir until everything melts and combines into a creamy, smoky sauce. 8. Final Simmer: Cover and cook for the remaining 30 minutes to let everything marry together. 9. Prep the second slow cooker: Lightly spray your slow cooker with avocado oil spray to prevent sticking. 2. Load it up: Add the entire 20 oz bag of Yukon Gold potatoes with peppers & onions. Add the 10 oz bag of seasoning blend right on top. 3. Add the richness: Place the full stick of Challenge butter on top of the vegetables (you can leave it whole or cut it into chunks). 4. Season it up: Sprinkle the entire packet of Bettergoods Carnitas Seasoning evenly over the mixture. 5. Cook low & slow: Cover and cook on LOW for 4–6 hours. Stir once it’s done so everything gets coated in that buttery carnitas goodness.THE FINAL BAKEInstructions:1. Heat the Oven Preheat to 400°F. 2. Crisp the Potatoes: Transfer cooked potatoes to a greased cast iron skillet (or casserole dish). Place the skillet in the oven immediately while preheating — this helps crisp the edges. Once preheated, bake an additional 10 minutes (optional but chef’s kiss). 3. Add the Chicken: Spoon shredded Hot Honey Kickin’ Chicken over the Cowboy Carnitas Potatoes. 4. Optional: Add Cheese Sprinkle generously with triple cheddar (or your cheese of choice). 5. Bake uncovered for 20 minutes until golden, bubbling, and irresistible.
