Carnivore Crockpot Chicken Carnitas (High Protein) + Cottage Cheese Tortillas

What You’ll Need
• Crockpot / slow cooker
• Cooking spray
Ingredients
• 3–5 boneless, skinless chicken breasts
• 10 oz hot pico de gallo
• 8 oz diced onion (about 1 medium onion)
• 3 Tbsp minced garlic
• 1 packet Siete Carnitas Seasoning
• 1 Tbsp cumin
• 1 Tbsp paprika
• 1 Tbsp chili powder
• 1 cup bone broth
• 1 Tbsp Knorr tomato bouillon (with chicken flavor)
• 1 packet Sazón Goya
Instructions
1. Prep the crockpot
• Lightly spray the inside of your crockpot with cooking spray.
2. Build the flavor base
Add the following directly to the crockpot:
+ Hot pico
+ Diced onions
+ Minced garlic
Stir to combine, then mix in:
+ Cumin
+ Paprika
+ Chili powder
+ Carnitas seasoning
3. Add the chicken
Place the chicken breasts on top of the mixture.
Spoon some of the seasoned pico/onion mixture over the chicken to lightly coat.
4. Pour the broth (important step)
In a separate cup, mix:
+ 1 cup bone broth
+ 1 Tbsp Knorr tomato bouillon
Slowly pour this around the sides of the chicken, not directly on top—this keeps the seasoning intact.
5. Final seasoning
Sprinkle the entire packet of Sazón Goya evenly over everything.
6. Cook
+ Low: 6 hours
+ or High: 3–4 hours
7. Shred & serve
Shred the chicken directly in the crockpot using two forks. Stir to soak up all those juices.

High-Protein Cottage Cheese Tortillas (Gluten-free, zero-carb)
Ingredients
+ 1 cup cottage cheese (full-fat works best)
+ 1 egg
+ ¼–½ cup shredded mozzarella (optional but helps texture)
+ Pinch of pink salt (optional)
Instructions
1. Blend
+ Add cottage cheese and egg to a blender or food processor. Blend until completely smooth.
2. Optional upgrade
+ Stir in shredded mozzarella for extra flexibility and strength.

+ Heat a non-stick skillet over medium-low heat
+ Lightly grease
+ Pour batter into thin circles (like crepes)
4. Flip
+ Cook 2–3 minutes per side until set and lightly golden.
5. Use immediately
