A buttery, savory, Tex-Mex-leaning potato dish that basically cooks itself. Perfect as a side… or honestly the whole dang meal.
Ingredients
• Avocado oil spray (for the crockpot)
• 1 (20 oz) bag Bettergoods Yukon Gold Potatoes with Peppers & Onions
• 1 (10 oz) bag Great Value Seasoning Blend (frozen onions, celery, peppers, parsley)
• 1 stick (8 tbsp) Challenge salted butter
• 1 packet Bettergoods Carnitas Seasoning Blend (1.3 oz)
Instructions
1. Prep the crockpot: Lightly spray your slow cooker with avocado oil spray to prevent sticking.
2. Load it up: Add the entire 20 oz bag of Yukon Gold potatoes with peppers & onions. Add the 10 oz bag of seasoning blend right on top.
3. Add the richness: Place the full stick of Challenge butter on top of the vegetables (you can leave it whole or cut it into chunks).
4. Season it up: Sprinkle the entire packet of Bettergoods Carnitas Seasoning evenly over the mixture.
5. Cook low & slow: Cover and cook on LOW for 4–6 hours. Stir once it’s done so everything gets coated in that buttery carnitas goodness.
6. Serve: Dish it out as a hearty side or serve it under shredded chicken, pulled pork, or my favorite: Hot Honey Kickin’ Chicken for the full cowboy experience.

• Want it crispier? Broil a portion on a sheet pan for 5 minutes after slow cooking.
• Want more kick? Add chipotle powder or jalapeños during the last hour.
• Awesome for meal prep—reheats beautifully.
