Ingredients
• 35 oz Mash Potato, homemade or precooked (I used mix of Bettergoods Belgian Style Mashed + Bettergoods Beligan Style Cheesy Potatoes Au gratin)
• 15.25 oz can Southwest Corn, drained (optional)
• 1-2 cups Shredded Cheese (Bettergoods sharp cheddar, farmhouse blend)
• 24 oz bag Lightly Breaded Boneless Chicken Bites (Bettergoods)
• 1 pack, Peppered Gravy Mix (Pioneer, cooked to instructions)
• 1-2 cups Shaved Parmesan Cheese (optional)
Instructions
• Preheat your oven to 400°F (200°C) and lightly grease a 9×12 baking dish.
• Spread the mashed potatoes evenly across the bottom of the dish.
• Spoon the drained vegetables evenly over the mashed potatoes.
• Sprinkle 1 cup of shredded cheddar cheese evenly over the corn.
• Top with lightly breaded chicken bites, spreading them evenly across the dish.
• Pour peppered gravy evenly over the top.
• Sprinkle 1 cup of shaved parmesan on top (optional)
• Place in the oven and bake uncovered until the casserole is heated through and the cheese is melted and bubbly. Bale for 25-30 minutes if you want a softer texture, and upwards to of 45 minutes if you want crispier chicken bites.
• Let rest for 5 minutes, then serve warm and enjoy your cozy, one-pan zesty KFC-inspired dinner!
